Quick and Easy Weeknight Dinners: Delicious Recipes for Busy Nights

The eternal struggle of the busy: cooking a decent meal on a weeknight. I mean, who has the time, right? Between work, classes, or trying to raise a family, it's a miracle some of us can even boil water. But, let's be real, takeout and ramen noodles can only take you so far. That's why I've compiled a list of my favorite quick and easy weeknight dinners that'll make your taste buds (and your wallet) happy.

Recipe 1: One-Pot Pasta
This one's a classic. I mean, who doesn't love a good ol' fashioned pasta dish? This recipe is a staple for a reason. Here's what you'll need:
* 1 lb. pasta of your choice
* 1 jar of marinara sauce
* 1 cup of shredded mozzarella
* 1 lb. ground beef, or any of your favourite protein (or veggies for a vegan option)
* Salt, pepper, and Italian seasoning to taste
Cook the pasta, brown the beef (or sauté those veggies), add the sauce and cheese, and voilà! A delicious, satisfying meal in under 30 minutes.

Recipe 2: Tacos
Tacos are the answer to all of life's problems. Okay, maybe that's a stretch, but they're definitely the answer to a quick and easy dinner. Here's what you'll need:
* 1 lb. ground beef (or ground turkey, chicken, or beans for a vegan option)
* 1 packet of taco seasoning
* 8-10 tacos shells
* Shredded cheese, lettuce, and any other toppings you like
Brown the beef, add the seasoning, and cook according to the packet. Serve it up in a shell with your favorite toppings, and you're golden.

Recipe 3: Omelette Extravaganza
Eggs are the ultimate weeknight dinner hero. They're cheap, versatile, and can be whipped up in no time. Here's what you'll need:
* 2 eggs
* 1 tablespoon of butter
* 1 cup of shredded cheese (cheddar or mozzarella work great)
* Chopped veggies (bell peppers, onions, mushrooms, etc.)
Beat those eggs, add a sprinkle of salt and pepper, and cook in a hot skillet. Add your cheese and veggies, fold that bad boy in half, and cook until the cheese is melted and the eggs are set.

Another Mexican-inspired masterpiece. These babies are easy to make and can be customized to your heart's content. Here's what you'll need:
* 2 tortillas
* 1 cup of shredded cheese (cheddar or Monterey Jack work great)
* 1/2 cup of chopped veggies (onions, bell peppers, etc.)
* 1/4 cup of cooked chicken or beans for added protein
Butter one side of each tortilla, place one tortilla butter-side down in a skillet, add cheese and veggies, and top with the other tortilla (butter-side up). Cook until the cheese is melted and the tortillas are crispy.
