Phil's decadent Egghead Brekkie Sammich!
Hey there, fellow foodies! Are you tired of the same old boring breakfast routine? Well, buckle up, because today we're about to level up your morning game with my take on a very infamous egg sandwich that contains a very bad word, so we shall not repeat it here. Normally, I'm pretty formal with you guys, but for recipes like this, we're going to let loose since this is a decadent dish.
This bad boy's got it all: creamy mayo, rich eggs, crispy bacon, melted cheese, and soft, fluffy bread. It's the perfect brekkie to fuel up for a fun day ahead! Read on to get your very own Phil's take on this naughty sandwich, I mean sammich!
Ingredients:
2 slices of bread (I like to use a ciabatta, or brioche), or a sliced bun
2 eggs
4 slices of bacon (More if you like!)
Mayonnaise
2 teaspoons Sriracha (more or less, to your taste)
1 teaspoon Smoked Paprika
4 slices of cheese, your preference, but a good cheddar works best
Salt and pepper to taste
Frank's Hot Sauce (or any hot sauce you have available)
Spring onions, or scallions, chopped finely.
Fresh herbs like parsley or chives (optional)
Prep the Mayo!
In a small bowl, combine the mayo, sriracha, and smoked paprika.
Yank that spicy mayo into the fridge to chill while we prep the sammich.
Let's get cracking!
Step 1: Cook the bacon
In a non stick pan, add a small pat of butter, add a couple of slices of bacon. Cook until crispy and golden, flipping halfway through.
Remove the bacon from the pan and set it aside on a paper towel-lined plate to drain excess grease.
An alternative option is to do the bacon in the air fryer.
Step 2: Prepare the eggs
Crack those eggs into a bowl, add some hot sauce to taste, and whisk 'em up with a fork. Add a generous pinch of salt and pepper to taste.
In the same pan (no need to clean it, mate) over medium heat and add a small pat of butter.
Pour in the eggs and scramble 'em up until curds begin to show. Once the tiny curds appear, add two slices of cheese and the scallions, or spring onions. Continue scrambling until the mixture is light, fluffy and perfectly soft. Separate the eggs into two piles and rest another piece of cheese on each one. Set aside.
Tips for the eggs: Don't overwork them, and don't overcook them. This is something that practice will make perfect. You want 'em to be still a bit runny, like me when I've had too much fun the night before. If you overcook your eggs, they will become rubber in your sammich.
Step 3: Assemble the sammich
Toast the bread until it's lightly browned and crispy. You can do this in the pan or in a toaster – whatever floats your boat! I think your boat should be the pan, with a bit of butter.
Spread a layer of our spicy mayonnaise on each slice of bread. Don't be shy, mate – you want a good dollop!
Optional - Add an extra slice of cheese on top of the mayo. Only for those who truly love their cheese. Be bold and use a very tasty cheese, or a blue cheese.
Add a few slices of that crispy bacon on top of the cheese, or mayo.
Place a scoop of those scrambled eggs on top of the bacon.
Top it all off with the other slice of bread, and voilà! You've got yourself a Phil's Egghead Brekkie Sammich!
Step 4: Add some extra love (optional, which in Phil's world means must try at least once!)
Sprinkle some chopped fresh herbs like spring onions, parsley or chives on top of the sammich for an extra burst of flavor.
A squirt of mustard can really complement the richness with a sharp tang. Alternatively, capers can have a similar effect.
A dollop of tomato sauce/ketchup.
Next time, swap out the bacon for some smoked salmon. Delicious!
